Oleic acid is insoluble in water but soluble in benzene and chloroform, and it is fully miscible with methanol, ethanol, ether, and carbon tetrachloride. Its double bonds make it prone to oxidation in air, which can cause yellowing and an unpleasant odor. It can be converted into oleic acid when treated with nitrogen oxides, nitric acid, mercurous nitrate, or sulfurous acid, and hydrogenation transforms it into stearic acid. The double bonds also readily react with halogens to produce halogenated stearic acid.

Oleic acid is typically obtained from olive oil or lard through steam distillation, crystallization, or extraction following hydrolysis. It is an excellent solvent for oils, fatty acids, and other oil-soluble substances. Its applications include the production of soaps, lubricants, flotation agents, ointments, and oleates.
